How to make medu vada using black gram/ Urad Dal

Medhu vada (ulundu vadai) is a traditional common dish from South Indian most nutritious and energy food. Sambhar vada as a popular breakfast in Karnataka and TamilNadu. This crispy deep fried snack is made from urad dal (black gram lentils) and a few basic spices like cumin seeds, black peppercorns, curry leaves and green chillies.

The process of making best crispy vadas at home is not difficult once you know the trick to get the perfect consistency of batter.

Ingredients

  • 1 Cup Urad Dal
  • 1/4 cup of moong dal optional
  • 2 tbsp of rice flour
  • 5-6 Tablespoons Water
  • ¾ Teaspoon Salt
  • ½ Teaspoon Hing asafoetida
  • 2 Tablespoons Rice Flour
  • 1 Teaspoon Jeera cumin seeds
  • 1 Teaspoon crushed Black Pepper
  • 1 Tablespoon chopped Coriander

Steps to follow

  • Wash & soak the urad dal about 3-4 hours
  • Grind the urad dal smooth and thick (It should not be watery) using blender & transfer to a mixing bowl.
  • Add 1/2-1tbsp salt & mix the stuff thoroughly.
  • Add 1/4tbsp soda, 3-4 finely chopped green chilies, 1tbsp crushed pepper & jeera, chopped coriander, soda,curry leaves & mix well.
  • Use wet hands to make batter shape of vada.
  • Drop it into the warm oil(Make sure your oil shouldn’t be too hot).
  • Repeat the same for an entire batter.
